Spicy Avocado Tartar Sauce

This is a great sauce for salmon or shrimp burgers.

Ingredients:

  • 1 Tbsp wasabi powder
  • 1 Tbsp Water
  • 0.50 cup Mayonnaise
  • 1 Ripe Avocado
  • 1.5 Tbsp Dill Pickle
  • 1.50 Tbsp Cilantro leaves, raw
  • 1 Tbsp Lime juice – Raw

Directions:

Combine mix smooth in food processor, hand blender, etc.

Red Velvet Soft Chocolate Chip Cookies

Ingredients

  • 1 and 1/2 cups + 1 tbls of all purpose flow
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter
  • 3/4 cup packed brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tbls milk
  • 2 tsp vanilla extract
  • 1.5 tbls red food coloring
  • 1 cup semi sweet chocolate chips
  • parchment paper

Dough Directions

  1. Soften butter and egg to room temperature (about 1 hour)
  2. In large bowl combine
    1. flour
    2. cocoa powder
    3. baking soda
    4. salt
  3. In mixer beat butter on high until creamy smooth
  4. Mix in brown sugar
  5. Mix in sugar
  6. Beat in egg
  7. Beat in milk
  8. Beat in vanilla extract
  9. Mix in food coloring
  10. With mixer off pour combined dry ingredients into web mixture
  11. Mix on low until you have a very soft dough
  12. Optional: Add more food coloring for deeper red
  13. Gentle mixing chocolate chips
  14. Cover dough tightly with plastic wrap and chill for at least 1 hour

Baking Directions

  1. Preheat oven to 350F
  2. Line baking sheets with parchment paper
  3. Create about 1.5 tbls balls and place on baking sheet.
  4. Bake for 9-10 minutes.  Warning: Do not over bake or they will turn very hard!!!!

Steak Tartare

Ingredients

  • 3 anchovy fillets
  • 2 tsp brined capers
  • 3 tsp Dijon mustard
  • 2 large egg yolks
  • 10 oz beef tenderloin
  • 2 tbls finely chopped red onion
  • 2 tbls finely chopped italian parsley leaves
  • 4 tsp olive oil
  • 3 dash of hot sauce
  • 4 dashes of Worcestershire sauce

Directions

  1. In a nonreactive bowl combine and mix evenly
    1. Rinse and mince the anchovy fillets
    2. Rinse the capers
    3. Mustard
  2. Mix in egg yolk
  3. Fold remaining ingredients into mixture
  4. Season with salt and ground pepper to task.
  5. Serve immediately

Russian Dressing

Ingredients

  • ½ cup mayonnaise
  • 2 Tbl. ketchup
  • 1 tsp. Worcestershire sauce
  • 1 tsp. prepared horseradish
  • freshly cracked pepper
  • pinch cayenne pepper
  • salt to taste, if needed

Instructions

  1. Combine all ingredients in bowl and mix

Mustard Cole Slaw

Ingredients

  • 1/2 head green cabbage, finely shredded
  • 1/2 head purple cabbage, finely shredded
  • 2 large carrots, finely shredded
  • 3/4 cup best-quality mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons grated Spanish onion
  • 2 tablespoons white vinegar
  • 1 tablespoon dry mustard
  • 2 teaspoons celery salt
  • Salt and freshly ground pepper

Ingredients

  1. Whisk together the mayonnaise, sour cream, onion, sugar, vinegar, mustard, celery salt, salt, and pepper in a large bowl
  2. Add to the cabbage and carrots
  3. Mix well to combine and taste for seasoning

Chipotle Chicken Vinaigrette Salad

Dressing (Serves 4)

  • salad2/3 cup Safflower oil
  • 1/4 cup White Vinega
  • 2 tbls. Water
  • Packet of Hidden Valley Ranch Dressing
  • 1 1/4 tsp. of chipotle

Combine all ingredients in container and shake to mix.  A Good Seasons Cruet works perfect.

Salad (Serves 1)

  • 1 boneless skinless chicken breastseasoned chicken
  • paprika
  • 1 stalk roman lettuce
  • 1/2 raw corn cob
  • 1/2 cucumber
  • 1 medium carrot

Directions

  1. Cut chicken into large cubes.  About 12 pieces.
  2. Season with salt, pepper, and cover with paprika.
  3. Sear both sides of chicken in hot lightly oiled pan.
  4. Reduce heat to medium and finish cooking.
  5. In large bowl combin
    1. cut lettuce
    2. sliced cucumbers
    3. shucked corready to mix
    4. thinly sliced carrots (slice with potato peeler on ends)
    5. salad dressing
  6. Serve salad and top with chicken.

Turkey Feta Meatloaf

Recommended with:

Ingredients:

  • 1 medium onion, chopped
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1 package frozen spinach, thawed and drained
  • 2 lbs ground turkey
  • 1/4 cup coconut flour (or 1/2 cup bread crumbs)
  • 1/2 cup chicken stock (reduce to 1/4 cup if using bread crumbs)
  • 1 large egg, lightly beaten
  • 2 tbsp worcestershire sauce
  • 1 cup crumbled feta cheese
  • Parchment paper

Directions:

  1. Preheat oven to 325F
  2. Line a baking sheet with parchment paper

In large skillet,

  1. Heat oil over medium heat.
  2. Stir in onions, salt and pepper and saute until onions are translucent but not browned, about 15 minutes.
  3. Add in spinach and stir until heated through.

In a large mixing bowl,

  1. Combine onion mixture, turkey, coconut flour, chicken stock, egg and worcestershire sauce. Mix until very well combined.
  2. Place half of the turkey mixture on prepared baking sheet and shape into a flat rectangle, about 1 inch thick.
  3. Cover with feta cheese, pressing on feta to adhere to meatloaf.
  4. Place remaining turkey mixture overtop of feta and shape the whole thing into a rough loaf.

Cook and serve

  1. Bake for 1 to 1 1/4 hours, or until internal temperature reaches 160F on an instant read thermometer.
  2. Cut into slices and drizzle with tzatziki sauce.
